Typical of all caramel malts, Château Cara Ruby too has glassiness as the defining trait. The glassiness leads to the creation of non-fermentable components that further the beer stability, and render mouthfeel, head retention, certain roundness, and good foam to the beer.

Château Cara Ruby is a result of an elaborate process that gets underway with freshly-made green malt being sent to the roaster. It’s caramelized to 220C, until it oozes the characteristic toffee flavor and reddish color.
